Soak Zwieback in espresso or strong coffee. Mix mascarpone and vanilla pudding together; if needed, add sugar to taste.
Spread the soaked Zwieback in the bottom of desired serving dish, top with a layer of the mascarpone and vanilla pudding mixture, place another layer of soaked Zwieback on top of this and top again with a layer of the mascarpone and vanilla pudding mixture.
Refrigerate for at least two hours before serving. Maybe decorated, or served with fresh berries if so desired.
