Preheat oven to 325 to 350 degrees.
Trim fat from pork chops. Spread both sides with mustard. Brown both sides in a hot frying pan. Place in layers in 2-quart casserole dish. Sprinkle 1 tablespoon onion over each layer. Pour cream of chicken soup over the top. Cover and bake 1 hour.
Serves 10 to 12.
